1. Bake potatoes then let them cool
2. Peel cooled potatoes, then dice
3. Creat roux - make Ruiz with 3T butter, then add milk
4. Cook over medium heat until thick and bubbly - suturing constantly
5. Add 3/4 cup cheese, salt, pepper and stir until cheese melts
6. Add potatoes, and hut until evenly warm
7. Stir in sour cream and 1/2 cup of onions. Cook over low heat 10 minutes or until heated DO NOT BOIL
8. Sprinkle cheese, onions, and beckon on each serving,.
