Add more veg in here if you’d like, broccoli, butternut pumpkin etc. would be amazing. Once cooked, slice into single portions and wrap in cling film. Freeze for a quick grab and go. This can be defrosted in the microwave or in the oven.

Instructions

Step 1
1. Preheat the oven to 180°C (350°F). Spray a round baking dish with olive oil and set aside.
Step 2
2. In a large mixing bowl, add eggs, egg whites, milk, cheese and spring onions. Mix well and set aside.

3. Heat a small frypan over medium-high heat and spray with olive oil. Add zucchini, capsicum, mushrooms, asparagus, brown onion, salt and pepper. Saute for 6 to 7 minutes or until vegetables begin to soften. Set aside to cool.

4. Add vegetables and cooked quinoa to the egg mixture and mix well.
Step 5
5. Pour into the prepared baking dish, season with salt and pepper and bake for about 30 minutes or until cooked through.
Step 6
6. Slice and serve with toast.
