Once cooked, slice into single portions and wrap in cling film. Freeze for a quick grab and
go. This can be defrosted in the microwave or in the oven.

Ingredients

6eggs
3egg whites
2 tablespoonsreduced fat milk

100greduced fat cheese
grated
2spring onions
thinly sliced
1zucchini
medium, grated and excess moisture squeezed out
1red capsicum
small, deseeded and chopped
5button mushrooms
sliced
4asparagus spears
woody ends trimmed and chopped in half
0.5brown onion
medium, diced
salt
pepper
250gquinoa
cooked
2 x 35gslices wholegrain bread
toasted
Instructions
Step 1
1. Preheat the oven to 180°C (350°F). Spray a round baking dish with olive oil and set aside.
Step 2
2. In a large mixing bowl, add eggs, egg whites, milk, cheese and spring onions. Mix well and set aside.
Step 3
3. Heat a small frypan over medium-high heat and spray with olive oil. Add zucchini, capsicum, mushrooms, asparagus, brown onion, salt and pepper. Saute for 6 to 7 minutes or until vegetables begin to soften. Set aside to cool.
Step 4
4. Add vegetables and cooked quinoa to the egg mixture and mix well.
Step 5
5. Pour into the prepared baking dish, season with salt and pepper and bake for about 30 minutes or until cooked through.
Step 6
6. Slice and serve with toast.
