Instructions

Step 1
Combine cream cheese & double cream in a mixer.

Add the erythritol (or your preferred sugar substitute) and mix well.
Step 3
Add zest and juice of 1 large lemon and mix well.
Step 4
Make up your gelatine according to it's instructions. For mine, I mixed it into 8tbsp hot water until dissolved, then add to your cream cheese mix. Continue to mix well.
Step 5
Divide the mix into 6 ramekins or glasses to chill.
Step 6
Serve and enjoy.
