Instructions

Cookies

Step 1
Preheat oven to 350 degrees

Using a handheld electric mixer, beat together softened butter and monkfruit sweetener until very smooth.

Beat in lemon zest and lemon juice.
Step 4
Beat in flour and salt.
Step 5
Roll dough into 1 inch balls and place on a baking sheet. Flatten out each ball before placing in the oven.
Step 6
Bake for 14 minutes.

Glaze

Step 7
While the cookies bake, add butter, confectioners’ sugar, lemon juice and lemon zest into a bowl. Mix ingredients together.

Final Touches

Step 8
Once the cookies have cooled, add the lemon glaze to the tops of the cookies. I like chocolate, so I melted vegan chocolate chips to add to some of the cookies. Enjoy!
