• Preheat your oven to 375°F (190°C). • In a skillet over medium heat, melt the butter. Add the brown sugar and stir until it dissolves and starts to caramelize. • Stir in the vanilla extract. • Add the peach slices and cook until they're soft and coated with the caramel. Remove from heat. • Roll out your puff pastry and cut it into 4 rectangles. Arrange the caramelized peach slices on one side of each rectangle. • Fold the other side of the puff pastry over the peaches and seal the edges. • Place the pastries on a lined baking sheet and bake for about 20-25 minutes or until golden brown. • Let them cool for a bit, then flip each one upside down. Dust with powdered sugar and serve.
