Instructions

Step 1
Preheat Oven to 475 degrees
Step 2
Dice Tomato. Trim scalions. Quarter Lime. Dice Bell Pepper
Step 3
In a small bowl, combine tomato scallions, a drizzle of oil, juice from one lime and season with salt and pepper
Step 4
In a separate small bowl combine sour cream with lime juice. Add water till drizzling consistency.
Step 5
Cook bell pepper till tender then transfer to small bowl
Step 6
Cook pork with HALF the seasonings mix. Return peppers to pan and mix.
Step 7
Place small amount of filling on one half of each tortilla. Roll up and place seam side down in an 8x8 dish.
Step 8
In a bowl, combine 1/2 cup water, tomato paste, and remaining seasoning mix to pour over enchilada.
Step 9
Sprinkle with cheese and then place in oven. Cook for 3-5 min
Step 10
Top with cream sauce and pico de gallo
