This was a delicious dinner that was very filling ! Great for leftovers for the next few days . Great flavor, lots of veggies and scrumptious toppings . An awesome one pot meal , perfect for fall weather.

Step 1
Cook 1 lb ground Turkey with olive oil , 1 large onion , garlic, 1 large zucchini, 2 cups mushrooms, 3 fresh tomatoes
Step 2
Add seasonings - chili packet, extra chili powder , cumin , salt, pepper
Step 3
Add beans, corn , stewed tomatoes, fire roasted tomatoes, jalepeno
Step 4
Add fresh spinach last 5 minutes of simmering . Simmer for at least 30 minutes
Step 5
Add toppings - raw onion, pickled jalapenos, avocado , sour cream , cilantro , chips , cheese
