Instructions

Step 1
1. Preheat the oven to 200°C (400°F) and line a baking tray with baking paper.
Step 2
2. Arrange sweet potato chips on the tray and season with salt and pepper. Spray with olive oil, tossing until evenly coated. Bake for about 15 minutes or until golden, turning the chips halfway through the cooking time.

3. Meanwhile, in a small bowl, combine turkey mince, breadcrumbs, parsley, thyme, garlic, egg white, salt and pepper. Use your hands to mix until well combined.

4. Heat a small frypan over medium-high heat and spray with olive oil. Form the turkey mixture into a ball and flatten into the shape of a burger patty. Cook for about 5 minutes on each side until cooked through.
Step 5
5. Serve the turkey patty on the bread roll or burger bun with tomato, lettuce and beetroot and sweet potato chips on the side.
