Step 1
Turn on Instand Pot to "saute" and place in oil, butter, and vegetables. Saute for 5-7 minutes. Turn off saute. Add 4 cups chicken broth and spices (except for parsley - save for later).
Step 2
Slice chicken breasts in half lengthwise. Place chick on top of vegetables and liquid in the Instant Pot. Put on lid and pressure cook on high for 12 minutes.
Step 3
Remove chicken. Stir in the uncooked noodles and parsley. As the noodles cook, shred the chicken and replace in the pot. Mix and serve.
