Instructions

For Roasted broccoli pesto

Step 1
Preheat oven 200c, spread the broccoli in a single layer on a large non stick tray, drizzle with 2 teaspoons of oil, then roast for 25 mins, or until brown at the edges.
Step 2
Remove broccoli from the oven and blitz with other ingredients, adding water if it needs thinning.

For Lamb and pistachio meatball 'spaghetti'

Step 3
Mix together lamb, egg, almond meal, pistachios and 1/2 cup of the parsley, roll tablespoons of the mixture into balls.
Step 4
Heat olive oil in a pan, med-high heat. Add meatballs and cook for 7-8 minutes until brown all over. Add the zoodles and pesto, toss until well combined. Remove from pan from heat and stir in the remaining parsley.
Step 5
Top with parmesan and black pepper and serve.
