Instructions
Step 1
1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft, about 5 minutes.

2. Add cumin and smoked paprika and cook for an additional minute.
Step 3
3. Add the whole peeled tomatoes (including the liquid in the can) and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

4. Remove from heat and let cool slightly. Using an immersion blender or regular blender, blend the soup until smooth.
Step 5
5. Add the avocados and cilantro and blend until smooth.
Step 6
6. Season with salt and pepper to taste.
