CORN AND HALOUMI FRITTERS

If you can’t find haloumi, swap for feta. Fritters can be cooked and then frozen. Once defrosted, these can be eaten warm or cold.

Instructions

Step 1
1. In a medium bowl, combine eggs, flour, haloumi, zucchini and corn. Mix well.
Step 2
2. Heat a frypan over medium heat and spray with olive oil. Spoon the fritter batter into the pan and shape into small patties. Cook for 2 to 3 minutes on each side or until lightly golden brown.
Step 3
3. Meanwhile, on a serving dish, combine the salad ingredients. Top with the cooked fritters and serve with a side of tzatziki.
