Press excess water out and cut your tofu into long cubes. Heat a pan (cast iron or carbon steel) till smoking hot. Place your tofu on the pan (separate the pieces such that they don’t touch each other). Leave it for 2-5 mins, then turn each tofu to roast the other sides. Slice onions into strips, add vinegar, paprika powder, lemon juice and salt. Let it rest. In a bowl, Add the ketchup, maple syrup, hot sauce, goda masala and mix well. Add the roasted tofu and mix to marinate well. Warm the tortillas on the pan, add a layer of lettuce or salad of your choice, drizzle with some mayo, add the onion strips, add the marinated tofu, roll and make a wrap. Serve with ketchup.
