Instructions

Step 1
1. Heat a wok over medium-high heat and add a splash of peanut oil.
Step 2
2. Add onion, garlic and chilli into the wok and cook for 2 to 3 minutes or until the onion becomes translucent.
Step 3
3. Add mince in the pan and break it into small pieces with your cooking utensil. Continue cooking for about 5 to 7 minutes, breaking it up as you go, until the beef starts to brown.

4. Add the carrot, snow peas and capsicum to the mince. Season with salt and pepper and continue to cook until the mince is cooked through and there is no excess liquid in the bottom of the pan, about 3 to 5 minutes.
Step 5
5. Add rice, hoisin and lime juice to the wok and mix well to heat through for another minute. Remove from heat.
Step 6
6. Serve topped with fresh coriander.
