BAKED BEANS ON TOAST

Swap butter beans for another bean like cannellini, kidney or black beans. The bean mixture once cooked can be frozen in the sauce in single serves and taken out when needed.

Instructions

Step 1
1. Heat a deep pan over medium-high heat and spray with olive oil. Add onion and garlic and cook for 2 to 3 minutes or until onion becomes translucent.
Step 2
2. Add butter beans and cook for 1 minute. Add canned tomatoes, capers, oregano, chilli flakes (if using), salt and pepper. Reduce heat to low and simmer for 15 minutes or until thickened. Taste and season accordingly.
Step 3
3. On a serving plate, top toast with the bean mixture and sprinkle with feta and fresh parsley.
