Instructions
Step 1
Finely chop onion, crush garlic and dice green capsicums
Step 2
Heat a little olive oil in a saucepan over medium heat, then add onion, garlic and green capsicum. Fry until onion is translucent
Step 3
Add tomato paste, cooking for a minute or so to cook out
Step 4
Wash the lentils, then add to saucepan with enough water to cover
Step 5
Bring to the boil and simmer for 15 minutes
Step 6
Add the ginger and chilli powder, adding more water if necessary, cooking for 10 minutes until liquid is absorbed
Step 7
Season with salt and pepper, then serve with Greek yoghurt
