Instructions

Step 1
1. Heat a small frypan over medium heat, add brown lentils and chickpeas and sauté for 1 to 2 minutes, or until warmed through. Make space in the pan, add the haloumi and fry until golden, about 2 to 3 minutes on each side. Remove from the heat.
Step 2
2. Transfer the warmed chickpeas and lentils to a serving bowl and add the beetroot, carrot, radish and parsley.
Step 3
3. In a small bowl, whisk together the dressing ingredients. Pour the dressing over the salad and toss to combine. Serve salad topped with haloumi.
