Instructions

Step 1
Preheat oven to 400 degrees and line 12 cup muffin tin with paper cups
Step 2
Coarsely chop half of the Claxton fruitcake and add to a mixing bowl along with all of the dry ingredients
Step 3
With a stand or hand mixer, mix together butter and sugar.
Step 4
Add egg and vanilla extract and blend until smooth.
Step 5
Add half of the flour mixer, then buttermilk, and then the remaining of the flour mixture until well combined
Step 6
Full muffin tin 2/3 full with the batter and bake for 18 minutes. Cool completely before adding the frosting.

Frosting

Step 7
Beat cream cheese with butter and vanilla extract until smooth.
Step 8
Gradually add powdered sugar
Step 9
Remove 1/4 of the white frosting to a separate bowl
Step 10
Slowly add red food coloring to the mixer until you reach your desired color
