Instructions

Step 1
Bring a large pot of heavily salted water to a boil over high heat. Add the pasta and cook to al dente according to the package directions. Drain the pasta and return it to the pot, off the heat.
Step 2
Meanwhile, in a large, deep skillet, heat the olive oil over medium heat. When it shimmers, add the garlic and oregano and cook for about 1 minute, until fragrant. Stir in the tomatoes and their juices, the salt, and brown sugar. Bring to a simmer, stirring occasionally, and cook for about 5 minutes, until the flavors come together.
Step 3
Transfer the tomato mixture to a blender or food processor and add the coconut cream. Blend until smooth. Add the sauce to the pot with the pasta. Add the basil and toss to combine. If the sauce gets too thick, add water, 1 tbsp at a time, until the desired consistency is reached. Taste and adjust the seasoning. Portion onto plates and top with pepper and basil.
