Step 1
Chop 1 large english cucumber into thin slices. Place into colander over a bowl . Sprinkle salt ok cucumber and let sit to release water for 30 minutes . After 30 min rinse cucumber , and lay out and pat dry on towel
Step 2
Make yogurt mix- add 1/4 cup low fat greek yogurt to a bowl , add thinly sliced red onion , fresh dill , 2 tbsp rice vinegar, salt and pepper to taste , juice of one whole lemon . Mix well
Step 3
Add cucumber to mixture, refrigerate for 30 minutes then serve
