Ingredients
4 servings
300gWhole wheat pasta
or low-calorie
200gSmoked fish
such as smoked salmon or smoked trout, flaked into small pieces
1 tablespoonolive oil
1onion
small, finely chopped
2cloves of garlic
minced
1 cuplow-fat Greek yogurt
or light sour cream
1lemon
zest and juice of
salt
to taste
pepper
fresh herbs
Chopped, such as dill or parsley, for garnish
Instructions
Step 1
Cook the pasta according to the package instructions until al dente. Drain and set aside.
Step 2
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is softened and translucent.
Step 3
In a bowl, mix together the low-fat Greek yogurt or light sour cream, lemon zest, and lemon juice. Season with salt and pepper to taste.
Step 4
Add the flaked smoked fish to the skillet with the sautéed onion and garlic. Cook for a minute or two, just until the fish is warmed through.
Step 5
Reduce the heat to low and add the cooked pasta to the skillet. Toss the pasta with the fish mixture until well combined.
Step 6
Remove the skillet from heat and add the yogurt or sour cream mixture to the pasta. Gently stir until the pasta is coated with the creamy sauce.
Step 7
Serve the creamy pasta with smoked fish in bowls or plates. Garnish with chopped fresh herbs like dill or parsley.
