Instructions

Step 1
Heat large frying pan over med-high heat and add olive oil. Once hot add half the onion and cook, tossing, for 2-3 minutes until tender. Add beef mince and cook, breaking up any lumps, for 4-5 mins. Add garlic, paprika and cumin and continue cooking for 2-3 minutes, until fragrant. Remove pan from heat.
Step 2
Preheat the over grill to high.
Step 3
Spread the corn ships over a large baking try and spoon the spiced mince over the top. Sprinkle with mozzarella, place under the grill and cook until the cheese is melted and the chips are golden brown.
Step 4
Mash the avocado in a small bowl and add the yoghurt until creamy.
Step 5
Remove nachos from the grill, top with tomatoes, onion and cucumber (jalapenos optional). Serve with avocado cream, I'm wedges and coriander.
