Instructions
Step 1
1. Cook the pasta according to packet instructions. Reserve 1 to 2 tablespoons of the pasta water and set aside.

2. Meanwhile, in a small bowl, combine the egg, parmesan, salt and pepper. Set aside.

3. Heat a medium frypan over medium heat and spray with olive oil. Fry bacon for 3 minutes, stirring regularly. Add garlic, mushrooms, asparagus and spring onion to the pan and sautΓ© for another 5 minutes until the mushrooms are soft and the asparagus tender. Remove from heat.

4. Working fast, add the hot pasta, pasta water and egg mixture to the pan with the bacon and vegetables, mixing quickly to coat. The residual heat in the pan will cook the egg, but make sure the pan is removed from the heat. If the pan is too hot, the eggs will scramble.
Step 5
5. Top the pasta with parsley and serve.
