Step 1
1. Preheat the oven to 180°C (350°F). Line a deep baking dish with baking paper and set aside.

2. In a large bowl, combine flour, protein powder, baking powder and salt.

3. In a separate large bowl, using an electric beater, beat eggs and sugar together until light and fluffy. Add coconut oil, coconut milk, vanilla extract and beat until combined.

4. Add the egg mixture to the dry ingredients and mix well.
Step 5
5. Pour the batter into the prepared baking dish and spread from edge to edge. Bake for 12 minutes or until cooked through. To check if it’s ready, stick a toothpick into the centre. If it comes out clean, it’s ready! Remove from the oven and allow it to cool, then slice.
