Instructions

Step 1
Preheat your oven to 180°C (350°F) and line an 8x8 inch baking pan with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.

In a separate large bowl, beat the eggs and sugar together with an electric mixer until light and frothy.

Mix in the melted butter until smooth.

Add the dry ingredients to the wet mixture and stir until just combined. Fold in the chocolate chips and instant coffee, if using.

Pour the batter into the prepared baking pan and smooth out the top.

Drop the peanut butter over the top of the batter in dollops. Use the tip of a knife or a screwer to swirl the peanut butter into the chocolate batter

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Let the brownies cool completely in the pan before cutting into squares and serving.
