Instructions

Brown short ribs in dutch oven

Medium heat

Set ribs aside

Deglaze Dutch oven with veggies

Soften onions (not caramelized)

Clear area in pan and cook tomato paste

Add red wine

Simmer and reduce until spoon through center of pan doesn’t fill immediately

Add beef broth

Return meat and lost juices to dutch oven

Cook for 3.5 hrs

Place in fridge and skim off solidified fat
