Instructions

Step 1
Whisk milk and eggs in a medium bowl. Melt 2 tbsp butter and add to bowl.
Step 2
In a separate large bowl, add flour, and sugar. Add egg mixture in two parts, mixing between. Do not overmix. Cover and let it rest for at least 20 minutes.
Step 3
Preheat a 10-inch non-stick pan over medium heat. Add I tbsp butter.
Step 4
Add 1/4 cup of the batter to the pan. Spread evenly, adding more batter if needed. Cook until edges are starting to brown, about 40 seconds. Flip and cook for an additional 10 seconds.
Step 5
Repeat until all the batter is used. Mix batter lightly before making each crepe.
Step 6
Top with your favorite spreads and fruits. Nutella banana, Chocolate stawberry, you name it! Serve and enjoy!
Step 7
While batter is resting, make the filling: In a bowl with an electric mixer, beat together cream cheese, lemon juice, and vanilla until combined and smooth. In another mixing bowl, beat the heavy cream and powdered sugar together until you reach stiff peaks. Gently fold the whipped cream into the cream cheese mixture until combined. Set aside.
