Step 1
Boil eggs for 6-8 mins.
Step 2
Mash the avocado in a small bowl with a fork, add the yoghurt, lemon and a pinch of pepper and mix to combine.

Toast bread. Serve the toasted bread topped with avocado mash, rocket and chopped egg. Drizzle with olive oil and season with more pepper.
