sautee onions, garlic, serranos, chorizo, and scallions with 1 TBS butter and olive oil (7-8 min)
Step 2
Add chipotle powder and salt and pepper
Step 3
Add tomatoes for 2-3 min on high heat
Step 4
Deglaze with wine and reduce by half
Step 5
Bring to a boil, add mussels, lower heat and cook until opened (3-4 min)
Step 6
Turn heat off, add remaining butter, cilantro, scallions and lime juice
