Step 1
Add olive oil to pan on medium high heat

Brown sausage until a crust is formed, then remove from pan

Add onion, garlic, peppers, and celery to pan and cook until soft

Add beans and season with Cajun seasoning
Step 5
Add chicken stock and simmer for about 30 minutes
Step 6
When fully cooked, partially mash the beans until the stew thickens
