Peanut Brittle/ Soft Brittle
1 cup sugar= 7.1 oz. 1 cup peanuts= 5 oz. 1 cup peanut butter= 8 oz. Baking soda and salt can be measured into 1 bowl and added together.

4 ozcorn syrup
1 cuppeanuts
lightly toasted
1 ozbutter
¾ tspbaking soda
½ tspvanilla extract

Optional for soft brittle:
Step 1
Set up double boiler with peanut butter in a heat-proof bowl. Gently heat the peanut butter until runny and warm.
For brittle:
Step 2
Cook sugar, water, corn syrup, and butter in small saucepan to 275, stir constantly until sugar disolves. Add peanuts and cook, stirring constantly, until mixture reaches 290-300.
Step 3
Remove from heat and stir in baking soda, salt, and vanilla. Optional: stir in warm peanut butter if making soft brittle.
Step 4
Working quickly, pour onto silpat lined baking sheet and spread evenly, as thin as possible. Cool completely before breaking into small pieces. Placing sheet in the freezer 15-20 min can help cool and set brittle quickly.
