Chop the onions, heat olive oil and butter in a pan, fry the onions until they are almost done (if you use garlic rather than garlic powder, add it here) Add red curry paste and stir for about a minute Add the minced meat and stir for another 2-3 minutes Add mushrooms + bell pepper, stir for another 3-4 minutes Cut and add in carrots and broccoli. Add coconut milk and let it simmer, stirring occasionally Add soy sauce, tomato paste, and vegetable stock to taste
