Instructions
Step 1
Blast the potato in the microwave for 4 minutes, rest for 2 minutes and then blast a further 4 minutes.
Step 2
Leave in the microwave for now.
Step 3
Meanwhile, melt the coconut oil in a large frying pan over a high heat.
Step 4
Throw in the spring onions, carrot and chilli and fry for 30 seconds, stirring almost constantly.
Step 5
Push the veg to the sides and plonk your mince right in the middle of the pan.

Leave it to brown on one side without touching it for about 45 seconds.

Then get stuck in with your wooden spoon to break up the meat, making sure it's all cooked through - don't even think about turning down the heat.

After 2–3 minutes the beef will have turned from pink to brown, which means it's cooked.

Sprinkle in the flour, stir to mix with the rest of the ingredients and quickly follow with the peas and beef stock.

Now you can reduce the heat just a little and stir the whole lot together until the sauce has thickened.
Step 11
Remove the pan from the heat and stir through the Worcestershire sauce.

Spoon the mix onto a plate, give the sweet potato a quick bash with a masher, adding a little salt and pepper along the way, and then splodge over the cottage pie mix.
