3 EASY delicious breakfast recipes: 1) blueberry oatmeal bake - 2 cups quick oats, ¾ cup milk, 1 cup unsweetened applesauce, 2 large eggs, ¼ cup maple syrup, 2 teaspoons pure vanilla extract, 1 ½ teaspoons cinnamon, ½ teaspoon baking powder, ¼ teaspoon salt, 2 cups blueberries, 1/4 cup vanilla protein powder. Add the oats, milk, applesauce, protein powder (optional), eggs, maple syrup, vanilla, cinnamon, baking powder and salt to a large bowl. Mix well. Layer in a casserole dish: Spread half the oat mixture in the bottom of the dish. Sprinkle with about ¾ of the blueberries. Top with the remaining oat mixture, carefully smoothing the top. Bake at 350 for 35-40 minutes. (2) Yogurt Bark: 1 1/2 cups plain Greek yogurt, 1/2 cup peanut butter, 2 tbsp honey, or maple syrup, 1/2 cup semi-sweet chocolate chips, melted. Combine everything. Spread out on parchment paper on baking sheet and freeze for at least 4 hours (or until hard) (3) Oatmeal Choc. Chip Cookie: 1/3 cup oats (I used gf), 1/2 small ripe banana, 1 tbsp nut butter (I used cashew), 2 tbsp protein powder of choice, 1/2 tsp vanilla extract, 3 tbsp chocolate chips. Combine together and form a large cookie. Bake in the airfryer at 350 on parchment paper for 8 minutes or so (or you can bake in oven for 10-12) This is one serving so if you want more just double, tripple, etc. And enjoy!
