¾ cupscandied ginger
3 tablespoonlemon zest
1/2 reserved for topping

Instructions
Step 1
Preheat the air fryer to 360 degrees F
Step 2
Stir together flour, 2 tablespoons sugar, baking powder, and salt in a medium bowl. Cut in the butter with 2 knives or hands until mixture resembles course crumbs.
Step 3
Beat egg with fork, add milk and vanilla extract until combined. Stir into flour mixture, leaving about 2 tablespoons of mixture behind (for topping scones before going into air fryer).
Step 4
Gently stir in candied ginger and lemon zest.
Step 5
Transfer dough to lightly floured surface. Gently knead until dough is no longer stick, about 8-10 strokes. Pat dough into 6-inch circle. Cut into 8 wedges, without separating, dipping knife in flour between cuts.
Step 6
Brush on remaining liquid.
Step 7
Separate dough wedges and carefully arrange them, in single layer in fryer basket. in batches if necessary.
Step 8
While scones are baking, combine powdered sugar, lemon & lemon zest to create icing.
Step 9
Remove scones from air fryer, let cool 5-8 minutes. Top with icing and enjoy!
