Step 1
In a food processor, finely chop ginger. Then add mint leaves and pulse a few times. Switch blade to large grating disk and pulse while feeding cucumber through hole. Dump contents into clean kitchen towel set over medium bowl. Gather ends of towel together and squeeze juice into bowl until nothing else comes out. Add 125 grams of sugar (about 3/4 cup) and stir until dissolved. Add half an ounce of vodka. To make mocktail, add 1.5 oz syrup to rocks glass. Add juice from half a lime, then top with Perrier or Topo Chico.
