Instructions
Step 1
Assemble, prepare, and measure ingredients. Rinse and drain berries well. Spread them out on a clean tea towel for a few minutes to dry them off completely, then move to a wide shallow bowl. Chop nuts roughly into large pieces. Pick rosemary leaves and mince very finely. Preheat oven to 350 degrees F.
Step 2
Melt butter in a large straight-sided skillet over medium heat. Add cayenne and/or maple syrup (if using). Stir in nuts to coat well and then toast for 2-3 minutes. Move nuts to an i greased baking sheet, sprinkle with salt and rosemary, and bake for 10-15 minutes, or until nuts are deep brown in places and your kitchen smells wonderful. Remove nuts from oven and allow to cook and crisp up before using.
Step 3
To serve, divide berries among four bowls. Pour some cream or spoon some yogurt over berries and top with a couple of toasted nuts. If you choose to use 35% cream you can whip it, but don’t add sugar.
