Instructions
Step 1
Heat oven to 180C fan.
Step 2
Fry bacon in oven proof casserole dish for 3-5 mins until crisp
Step 3
Stir in butter and onion and leek and cook 3-4 mins until soft
Step 4
Tip in rice and mix well until coated.
Step 5
Pour over wine if using and cook 2 mins until absorbed
Step 6
Add cherry tomatoes, mushrooms and stock and stir
Step 7
Cover with lid and bake 25 mins until cooked
Step 8
Stir through most of parmesan and serve sprinkled with the rest
Step 9
Serve with microwaved green beans
