Instructions

Step 1
Salt Mixture: 2.5% of the weight of Pork Belly (grams)
Step 2
Cover all sides of Pork Belly with the salt mixture
Step 3
Seal the Pork Belly in a bag for 7 days
Step 4
Rinse off all of the salt mixture
Step 5
Smoke the meat at 200 degrees until an internal temperature of 150 degrees is reached. This should take about 4 hours.
Step 6
Let the meat cool
Step 7
Wrap in plastic and put it in the refrigerator for 24 hours
