Instructions
Step 1
NOTE: I use Szechwan chili powder which is spicier.
Also I use cans of tomatoes & green chilis. Keep in mind that the Long Grain and Wild Rice takes longer to cook and is suppose to be chewy in texture when done.
Step 2
In Pot add coconut oil, onion, seasonings and ground chicken, let chicken brown.
Step 3
Add tomatoes, beans, corn and bone broth and bring to boil.
Step 4
Reduce to med heat and stir in rice.
Step 5
Allow to cook for 45 minutes to let the rice cook through adding more broth if needed.
Step 6
Stir every 10 minutes or so, making sure the bottom of the pot is scraped clean.
Step 7
Serve with tortilla chips or in bread bowl.
