Step 1
Add onion, green onions, Scotch bonnet, oil, lime juice, sugar, ginger, garlic, allspice, salt, thyme, vinegar, and pepper to a food processor: cover. Process into a coarse paste
Step 2
Add chicken to a gallon-sized resealable plastic bag; add onion mixture to bag. Seal, squeezing out as much air as possible. Refrigerate for at least 4 hours, or up to overnight.
Step 3
Preheat grill.
Step 4
Remove chicken from bag; discard excess marinade. Grill over medium heat for 4 to 5 minutes; flip. Grill for an additional 4 to 5 minutes, or until cooked through.
Step 5
You can also roast this chicken in a 425° F (220 °C) oven for 15 to 17 minutes, or until cooked through.
