Instructions
Step 1
1. Set instant pot to the sauté function. When hot, add olive oil and cook chicken until done. Add onion and carrots and sauté until the vegetables are soft, approximately 4 minutes. Add garlic and sauté an additional minute.

2. Turn the Instant Pot to high pressure, add broth, quinoa, water, salt, pepper, basil, bay leaves and stir.
Step 3
3. Cover and seal the Instant Pot and cook on high pressure for 7 minutes.
Step 4
4. Once it is done, release the pressure immediately, remove the bay leaves and stir in the spinach. Set Instant Pot to Soup/Broth and cook for 5 minutes until the spinach is wilted.
Step 5
5. Add the lemon juice.
