Instructions

Step 1
Soak beans in water overnight
Step 2
Pour olive oil into pan and toast spices
Step 3
Add garlic and onion, then saute

Add tomato, salt and paprika

When tomatoes are well cooked, add chipotle and keep stirring

Add chicken broth or water and salt, and bring to a boil

Add beans, cover, and cook for 25 minutes on medium

Add veggies and cook 10 minutes for chayote and carrots, 5 minutes for potatos, celery, and zucchini
