Instructions
Step 1
Melt butter in pan.
Step 2
Add onions, peppers and garlic. Allow vegetables to sweat slowly for approximately 25-30 minutes.
Step 3
Add tomatoes and mix together. Add vegetable stock. Bring to the boil, then simmer for approximately 30 minutes.
Step 4
Blend/liquidise if required and season with salt and pepper.
