Instructions

Step 1
Melt butter in biggest saucepan, then add chopped onion to fry until softened. Do not brown.
Step 2
Add butternut squash, red pepper and stock, simmering for 20 minutes
Step 3
Remove from heat and blend, then add milk, cream cheese and goat's cheese along with half of the chives; reheat
Step 4
Serve with fresh chives
