Instructions

Step 1
preheat broiler @ High
Step 2
Core then cut apples into 1/2 inch pieces Whisk together dijon, vinegar, 2 t sugar & 2 T oil in a large bowl Season with salt, add the apples & toss together Set aside Halve the tomatoes

Pat chicken dry with paper towels Slice into the center of each breast parallel with the cutting board & open like a book Season with salt & pepper Pour bread crumbs into a shallow dish Coat chicken all over with mayo Working with one breast at a time press into bread crumbs to coat completely

Heat a large pan over med-high & add 4 T oil When hot add chicken (working with 2 at a time) Pan fry until golden brown 4-5 min Flip & add 2 T more oil. Pan fry until golden brown 4-5 min Transfer to a foil lined baking sheet
Step 5
Evenly sprinkle cheese over chicken Broil in MIDDLE of oven until cheese is golden & chicken is cooked through 2-3 min
Step 6
Add spinach & tomatoes to the bowl with the apples, then toss together
Step 7
Divide chicken & salad between plates
