150gmushrooms
sliced
175grisotto rice
40ghard italian cheese
1brown onion
diced
2cloves garlic
crushed
500mlchicken stock
1 Tbspapple cider vinegar
0.5lemon
Salad
Instructions
Step 1
Fry onions for 2 minutes, then add mushrooms, season, and fry for 5-6 minutes
Step 2
add garlic and fry for 1 minute
Step 3
add risotto rice and fry for 1-2 mins
Step 4
add cider vinegar, and fry until evaporated
Step 5
add stock and bring to boil, then bake until water is absorbed, 20-25 mins
Finishing
Step 6
Add knob of butter, 3/4 of the cheese, lemon zest and some lemon juice. Season to taste
Step 7
Serve topped with rocket salad and remaining cheese
