Ingredients

200gground pork
6shrimp
peeled and deveined
0.5 headgreen cabbage
thinly sliced
2celery stalks
julienned
1carrot
small, julienned
2 Tbspshaoxing wine
1 tspsalt
1 tspoyster sauce
1 tspsoy sauce
½ tspsugar
¼ tspfive spice
¼ tspwhite pepper
1 Tbspcorn starch
1 Tbspwater
neutral oil
for frying

Instructions

Step 1
Combine apricot jam, apple sauce, rice vinegar, sugar, and the minced pickled plum.
Egg Rolls
Step 2
Boil a pot of water and prepare an ice bath.
Step 3
Blanch celery, carrots, and cabbage for 2 minutes and immediately shock in ice bath.
Step 4
Wring out the water from the vegetables and transfer to another bowl.
Step 5
In the same blanching pot, add shrimp and cook for 1 minute. Then transfer to an ice bath. Set aside.
Step 6
In a pan over medium heat, add a splash of oil. Add ground pork and break into smaller clumps.
Step 7
When caramelized, deglaze with shaoxing wine, then season with salt, oyster sauce, soy sauce, five spice, sugar, and white pepper.
Step 8
Cook until liquid is almost evaporated (~ 2 min) and let cool slightly before transferring to the bowl with veggies.
Step 9
Combine 1 tbsp water with 1 tbsp of corn starch. Roll egg roll wrappers according to video and seal with the corn starch slurry.
Step 10
Heat oil in a pot or fryer to 160 C (325 F).
Step 11
Fry egg rolls until lightly golden (~ 5 min), turning as needed. Cool on a rack.
Step 12
Increase oil temperature to 190 C (375 F) and fry egg rolls for a second time until slightly darker and crisp (~2 - 3 min). Let cool slightly and enjoy!
