Bird’s Eye Chilis are beloved for their fruity, peppery flavor and intense slow-building heat. Unlike many hot chillis, you’ll actually be able to taste some hints of fruit-like flavours. Our aromatic Madagascan Chilis are sourced to you fresh and directly from our farms in Madagascar.

Instructions
Step 1
Char the tomatoes and peppers directly on the gas stove. Once done, let it cool.
Step 2
Dry roast the garlic cloves in a pan for a couple of minutes. Once done, also let it cool aside.
Step 3
Add the garlic, tomatoes, peppers and the bird’s eye chili in a blender. Add ½ cup of water and blend again.
Step 4
Spread it in a pan and add the olive oil, sugar, salt and vinegar. Bring it to a boil and let it simmer for 5 minutes. Once cooled, taste for salt and adjust if required.
Step 5
Pour the sauce in a container, cover it and allow for it to age for a few days to help the flavours blend better.
Step 6
Finally, strain it through a sieve and pour about a tablespoon of the strained mixture back to the sauce.
