Instructions
Step 1
Place sweet potatoes in a large pot and cover with water ; bring to a boil.
Step 2
Reduce heat to medium-low and simmer until tender, 40 to 50 minutes.
Step 3
Drain water, peel sweet potatoes and mash in a bowl.
Step 4
Preheat oven to 425 degrees F (or 220 degrees C)
Step 5
Mix potatoes, milk, sugar, flour, vanilla extract, nutmeg, clove, cinnamon, baking powder and lemon juice together.
Step 6
Taste and add sugar or other spices to taste.
Step 7
Mix beaten eggs and butter together until smooth.
Step 8
Then add to sweet potato mixture above.
Step 9
Add filling to pie shells

Bake in the preheated oven for 10 minutes.
Step 11
Lower oven to 350 degrees F( 175 Degrees C) and continue to bake until a toothpick inserted in the center of a pie comes out clean, about 40 minutes. Cool pie for 15 to 30 minutes before refrigerating to cool completely 1 to 2 hours.
